Description

This Easy Blackberry Pie features a flaky crust with a luscious filling of juicy blackberries, lemon juice, and a touch of sweetness. It’s perfect for gatherings and simple enough for any baker!


Ingredients

  • 2 1/2 cups flour
  • 1/2 tbsp sugar
  • 1/2 tsp salt
  • 1 cup butter, cold & diced
  • 7 tbsp cold water
  • 1 egg + 1 tbsp water for egg wash
  • sugar for sprinkling, optional
  • 2 tbsp water
  • 2 tsp lemon juice
  • 1 tsp vanilla
  • 6 cups blackberries
  • 3/4 cup sugar
  • 5 tbsp cornstarch

Instructions

  1. In a food processor, combine flour, sugar, and salt; pulse to combine.
  2. Add cold, diced butter and pulse until coarse crumbs form.
  3. Incorporate cold water, pulsing until moist clumps form.
  4. Transfer to parchment paper, divide into two balls, flatten into discs, and wrap in plastic wrap.
  5. Refrigerate for 1 hour before use.
  6. Preheat the oven to 400°F when crust is ready.
  7. In a saucepan over medium heat, combine water, lemon juice, vanilla, and blackberries for filling.
  8. Stir in sugar and cornstarch, cooking until thickened; set aside to cool.
  9. Roll out the bottom crust to a 12" circle and transfer to a 9" pie plate.
  10. Carefully add the blackberry mixture, ensuring edges remain clean.
  11. Roll out the remaining dough for the top crust, place it over the pie, and trim edges.
  12. Pinch edges to seal and whisk together egg and water; brush over pie.
  13. Optionally sprinkle sugar on top, then cut slits for steam to escape.
  14. Bake for 15 minutes, then reduce temperature to 350°F and bake for an additional 45-50 minutes until bubbly and golden brown.
  15. Cover pie if crust browns too quickly and allow to cool before serving.

Notes

Ensure the butter is sufficiently cold for a flaky crust.
Adjust sugar based on the sweetness of the blackberries used.
Let the pie cool completely before slicing for cleaner slices.
