Description

These Decadent Cottage Cheese Date Brownies are rich in flavor and easy to make, featuring a base of cottage cheese for added protein and delicious sweetness from dates. Perfect for a snack or a healthy dessert, these brownies are a treat you’ll love sharing!


Ingredients

  • 10 dates (soaked in hot water for 10 minutes to soften)
  • 1/2 cup almond flour
  • 4 tbsp chocolate protein powder
  • 2 tbsp cocoa powder
  • 2 1/2 tbsp maple syrup
  • 1 tsp vanilla
  • 1/8 teaspoon salt
  • 1 cup cottage cheese
  • 1/2 cup vanilla protein powder
  • 1 1/4 cups almond flour
  • 2 1/2 tbsp maple syrup
  • 2 tbsp cashew butter
  • 1 1/2 tsp vanilla
  • 1/3 cup mini chocolate chips

Instructions

  • Soak the 10 dates in hot water for 10 minutes until soft, then drain and blend them with the chocolate protein powder, cocoa powder, maple syrup, vanilla, and salt until smooth. This mixture will serve as the brownie base.
  • In a large bowl, mix the cottage cheese, vanilla protein powder, almond flour, cashew butter, the remaining maple syrup, and vanilla until fully combined.
  • Line an 8×8 inch baking dish with parchment paper. Spread the date-chocolate mixture evenly across the bottom. Then, spread the cottage cheese mixture on top, smoothing it out with damp hands.
  • Freeze the assembled dish for at least 1 hour, until firm. Once firm, lift it out using the parchment paper and cut into squares for serving.

Notes

Using high-quality cottage cheese enhances the texture of the brownies.
Feel free to adjust the sweetness by adding more or less maple syrup based on your preference.
These brownies can be stored in the freezer for a longer shelf-life.
