  • 2 ½ cups about 3 small/medium apples, peeled, cored, and diced very small
  • 2 teaspoons granulated sugar
  • ½ teaspoon cinnamon
  • ½ cups (62g) all-purpose flour
  • ½ cup (100g) packed brown sugar
  • ¼ teaspoon salt
  • 3 tablespoons (42g) unsalted butter, melted
  • 2 large eggs
  • 1 cup (200g) granulated sugar
  • ½ cup (118ml) vegetable oil
  • 1 teaspoon vanilla extract
  • 1 teaspoon white vinegar
  • 1 teaspoon baking soda
  • 1 teaspoon cinnamon
  • ¼ teaspoon salt
  • 1 cup (245g) sour cream
  • 2 cups (248g) all-purpose flour

Instructions

  1. Preheat the oven to 350°F and line muffin pans with paper baking cups.
  2. In a medium-sized microwave bowl, place the diced apples, add 1/2 inch of water, and microwave for about 2 minutes until the apples are slightly translucent. Drain well, sprinkle with cinnamon and sugar, and set aside.
  3. Prepare the topping by stirring all topping ingredients together in a separate bowl. Set this aside.
  4. Using a hand mixer or a wooden spoon, combine eggs, granulated sugar, and vegetable oil until creamy. Mix in vanilla, vinegar, baking soda, cinnamon, and salt. Then, add sour cream and stir in the flour, creating a slightly lumpy batter. Fold in the apples.
  5. Fill muffin cups about 2/3 full with the batter—approx. 1/4 cup per muffin cup—and sprinkle the crumble topping evenly over the muffins.
  6. Bake for 15-19 minutes, or until a toothpick inserted into the center comes out clean. Let cool in the pan for 5 minutes, then transfer to a rack to cool completely.
  7. Store in an airtight container for up to 3 days or freeze for up to one month.

Notes

For best results, use fresh, crisp apples for flavor.
Ensure not to overmix the batter for fluffy muffins.
You can replace sour cream with Greek yogurt if preferred.
