- 1 pound dried navy beans
- 5 cups water
- 1 medium yellow onion, diced
- 1/2 cup brown sugar
- 1/3 cup molasses
- 1/3 cup apple cider vinegar
- 6 ounces tomato paste
- 2 tablespoons yellow mustard
- 1 teaspoon pepper
- 5 strips thick cut bacon, cooked until crisp and cut into small pieces
- 3 teaspoons salt
Instructions
- Rinse the dried navy beans in a colander and remove any damaged beans.
- In a crock pot, combine the rinsed beans, water, diced onion, brown sugar, molasses, apple cider vinegar, tomato paste, yellow mustard, and pepper.
- Cook on high for 9-10 hours. If beans are presoaked, cook on low for 8-10 hours or on high for 4-6 hours.
- In the last hour of cooking, add the cooked bacon and salt, stirring to combine.
Notes
You can soak the beans overnight if desired, which reduces cooking time.
Adjust the sweetness by altering the amount of brown sugar and molasses to taste.
Ensure to stir occasionally for even cooking.
