- 4 cabbage steaks
- 1/3 cup olive oil
- 1 1/2 tsp. minced garlic
- 1/4 tsp. salt
- 1/2 tsp. pepper
- 1 tsp. smoked paprika
- 1 1/2 cups grated parmigiano reggiano cheese
- 1 tbsp. balsamic vinegar
- 1 tbsp. chopped parsley
Instructions
- Preheat the oven to 425°F and prepare a baking sheet with parchment paper. Slice the cabbage in half vertically and cut 1-inch thick steaks from one half, ensuring they remain intact through the stem.
- In a bowl, mix together the olive oil, 1/3 cup of grated Parmesan, minced garlic, salt, pepper, and smoked paprika. Brush this mixture onto both sides of the cabbage steaks.
- Using the rest of the Parmesan, create small piles on the baking sheet for each steak (approximately 1/3 cup per pile). Then, place each cabbage steak on top of its cheese pile.
- Roast the cabbage steaks for 20-25 minutes, or until the cheese turns golden and crisp.
- Once done, drizzle the roasted steaks with balsamic vinegar and sprinkle with fresh parsley. Serve immediately.
