Description

Ingredients

  • 2 medium zucchini, sliced
  • 2 cups panko breadcrumbs
  • 1/2 tsp salt
  • 1 cup flour
  • 3 eggs, beaten

Instructions

  2. Slice zucchini into 1/4" rounds and set aside.
  3. Whisk together breadcrumbs and salt in a bowl.
  4. Put flour into a shallow plate and beat the eggs in a separate shallow bowl.
  5. Dredge each zucchini round in flour, dip into beaten eggs, then coat with the breadcrumb mixture.
