Ingredients

  • 4 garlic cloves, minced
  • 4 tablespoons organic all-purpose flour
  • 1 ½ tablespoons tuscan marry me blend
  • 1 teaspoon smoked paprika
  • 1 teaspoon sea salt
  • 34 tablespoons organic tomato paste
  • 56 sundried tomatoes
  • 4 cups chicken or vegetable stock
  • 1 ½ cups organic heavy cream
  • ½ lemon, freshly-squeezed
  • 1 cup chopped kale, organic
  • 2 cups cherry or grape tomatoes
  • 2 (8 oz.) packages organic cheese + spinach tortellini
  • 2 bay leaves
  • 1 cup freshly-grated parmesan

Instructions

  1. Heat olive oil in a medium-sized dutch oven pot over medium high heat.
  2. Add minced garlic, sundried tomatoes (if using), and fresh tomatoes, sauté for 1-2 minutes until fragrant.
  3. Stir in the Tuscan Marry Me Blend, smoked paprika, and salt, ensuring even distribution.
  4. Mix in the tomato paste and flour, stirring until completely combined.
  5. Gradually pour in the chicken or vegetable stock, stirring frequently to prevent lumps, until thickened.
  6. Incorporate lemon juice, heavy cream, tortellini, bay leaves (if using), and kale, stirring to combine.
  7. Allow the mixture to simmer for 8-10 minutes until the broth thickens and tortellini cook through and float to the top.
  8. Stir in freshly-grated parmesan until smooth and melted.
  9. Remove from heat, serve in bowls, and top with more parmesan and optional sides.

Notes

Feel free to adjust the amount of tomato paste for a more pronounced flavor.
