- 1 cup chopped kale, organic
- 2 cups cherry or grape tomatoes
- 2 (8 oz.) packages organic cheese + spinach tortellini
- 2 bay leaves
- 1 cup freshly-grated parmesan
Instructions
- Heat olive oil in a medium-sized dutch oven pot over medium high heat.
- Add minced garlic, sundried tomatoes (if using), and fresh tomatoes, sauté for 1-2 minutes until fragrant.
- Stir in the Tuscan Marry Me Blend, smoked paprika, and salt, ensuring even distribution.
- Mix in the tomato paste and flour, stirring until completely combined.
- Gradually pour in the chicken or vegetable stock, stirring frequently to prevent lumps, until thickened.
- Incorporate lemon juice, heavy cream, tortellini, bay leaves (if using), and kale, stirring to combine.
- Allow the mixture to simmer for 8-10 minutes until the broth thickens and tortellini cook through and float to the top.
- Stir in freshly-grated parmesan until smooth and melted.
- Remove from heat, serve in bowls, and top with more parmesan and optional sides.
