Description

This Creamy Smothered Chicken and Rice offers an irresistible flavor combination with tender chicken, creamy sauce, and perfectly cooked rice. It’s a quick yet satisfying meal that’s perfect for weeknight dinners or cozy family gatherings.


Ingredients

  • 1 cup long grain rice
  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken breast, cut into bite sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1½ cup chicken broth
  • 1½ cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • ¼ teaspoon nutmeg
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Cook the rice according to the package directions.
  2. Heat a large skillet with olive oil over medium-high heat. Season the chicken with onion powder, garlic powder, paprika, salt, and pepper. Add the chicken to the hot skillet. Sear for 2-3 minutes, then stir, cooking for an additional 3-4 minutes, or until the chicken is fully cooked (165˚F internal temp). Remove the chicken from the skillet and set aside.
  3. Reduce heat to medium and add the butter to the skillet until melted. Stir in the minced garlic and cook for about 30 seconds. Add the flour and stir until a paste forms, about 1 minute.
  4. Whisk in the chicken broth and heavy cream, bringing the mixture to a simmer. Allow the sauce to simmer for 1-2 minutes until it starts to thicken. Stir in salt, pepper, nutmeg, and Parmesan cheese, then add the cooked chicken back into the sauce.
  5. To serve, spoon the smothered chicken over the prepared rice and garnish with freshly chopped parsley.

Notes

You can customize the seasoning based on your preference.
For a lighter version, consider using low-fat cream or milk instead of heavy cream.
Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
