Description

This Creamy Smothered Chicken and Rice is a delightful comfort food that features tender chicken, a rich cream sauce, and fluffy rice, making it a perfect option for a quick weeknight meal.


Ingredients

  • 1 cup long grain rice
  • 2 tablespoons olive oil
  • 2 pounds boneless, skinless chicken breast, cut into bite sized pieces
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons butter
  • 3 cloves garlic, minced
  • 2 tablespoons all-purpose flour
  • 1½ cup chicken broth
  • 1½ cup heavy cream
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • ¼ teaspoon nutmeg
  • ½ cup grated Parmesan cheese
  • Fresh parsley, chopped

Instructions

  1. Cook rice according to package directions.
  2. Heat a large skillet over medium high heat and add olive oil.
  3. Season the chicken with onion powder, garlic powder, paprika, salt, and pepper, then add to the skillet. Sear for 2-3 minutes, stir, and cook an additional 3-4 minutes until cooked through. Remove chicken from skillet and set aside.
  4. Reduce heat to medium, add butter, and melt. Stir in minced garlic and cook for 30 seconds, then add flour and stir for about 1 minute to form a paste.
  5. Whisk in chicken broth and heavy cream, bring to a simmer, and allow to thicken for 1-2 minutes. Stir in salt, pepper, nutmeg, and Parmesan cheese, then return the chicken to the skillet.
  6. Spoon the smothered chicken over the rice and garnish with chopped parsley. Enjoy!

Notes

Feel free to substitute chicken with other proteins like turkey or tofu.
You can add vegetables such as peas or spinach for added nutrition and color.
