Description

This Creamy Chicken Alfredo is a rich and flavorful dish that combines tender chicken, fettuccine, and a luscious sauce. It’s a quick and satisfying meal, ideal for any busy evening.


Ingredients

  • 200 g / 7oz chicken breast, cut in half horizontally
  • Salt and pepper to taste
  • 1 tbsp olive oil
  • 250 g / 8 oz fettuccine
  • 2 cups milk, any fat %
  • 1 1/2 cups chicken stock / broth
  • 1 large garlic clove, minced
  • 1/2 cup thickened / heavy cream
  • 3/4 cup freshly grated parmesan
  • Parsley, for garnish

Instructions

  1. Sprinkle salt and pepper on both sides of the chicken.
  2. In a large skillet, heat olive oil over medium-high heat. Cook the chicken for 2 minutes on each side until golden and cooked through. Remove from skillet, let rest for 5 minutes, then slice.
  3. Add milk, chicken stock, and minced garlic to the skillet. Bring to a simmer, then add the fettuccine.
  4. Stir the pasta every 30 seconds until softened, around 3 minutes. Once softened, reduce heat to medium, stir occasionally.
  5. After about 9–10 minutes, when the pasta is nearly done and there's still liquid in the skillet, add heavy cream and parmesan. Mix well.
  6. Simmer for another 2 minutes, stirring occasionally, until the sauce thickens and pasta is fully cooked. If sauce thickens too much, add a splash of hot water to restore creaminess.
  7. Season with additional salt and pepper to taste, and serve immediately with garnishes of parmesan and parsley.

Notes

Feel free to use your favorite pasta instead of fettuccine.
For extra flavor, consider adding vegetables like spinach or broccoli.
The dish tastes best when served fresh, but leftovers can be reheated gently.
