Description

This Cowboy Chicken is a flavor-packed dish featuring tender chicken cutlets, zesty spices, and a mix of black beans and corn. Perfect for a quick dinner or a hearty meal, it’s simple to prepare and sure to impress family and friends!


Ingredients

  • 4 chicken cutlets or 2 chicken breasts cut horizontally
  • 1½ teaspoons smoked paprika
  • ¾ teaspoon garlic powder
  • ¾ teaspoon onion powder
  • ¾ teaspoon salt
  • ½ teaspoon black pepper
  • 2 tablespoons olive oil divided
  • 1 small yellow onion diced
  • 1 (15 ounce) can black beans drained and rinsed
  • 1 (15.25 ounce) can corn kernels or southwest corn, drained
  • 1 (10.5 ounce) can diced tomatoes with chilies or petite diced tomatoes, drained
  • 2 tablespoons fresh lime juice juice from 1 lime
  • ¼ cup barbecue sauce any variety
  • ¾ cup shredded mexican cheese blend
  • chopped fresh cilantro , jalapeños, and avocado for serving

Instructions

  1. Preheat the oven to broil (500°F) and set the rack 6 inches below the broiler.
  2. In a small bowl, mix together smoked paprika, garlic powder, onion powder, salt, and pepper. Reserve 1½ teaspoons of the seasoning for later use with the cowboy caviar.
  3. Season both sides of the chicken with the spice mixture.
  4. Heat 1 tablespoon of olive oil in a large oven-safe skillet over medium-high heat. Cook the chicken for 3-4 minutes per side until fully cooked (165℉). Remove and set aside.
  5. Lower the heat to medium, add the remaining olive oil to the skillet, and then add the diced onion. Cook until tender (about 4-5 minutes).
  6. Stir in the black beans, corn, diced tomatoes, reserved seasoning, and lime juice. Cook for an additional 4-5 minutes until heated through.
  7. Place the chicken back into the skillet, brush with barbecue sauce, and sprinkle with shredded cheese.
  8. Broil in the oven for 2-3 minutes until the cheese is melted and bubbly.
  9. Serve topped with jalapeños, cilantro, and avocado if desired.

Notes

Feel free to use leftover roasted chicken for a quicker prep.
Adjust the amount of jalapeños based on your heat preference.
Substitute any variety of cheese as per your taste.
