Description

These Circus Animal Cookie Rice Krispie Treats are an irresistible blend of sweetness and crunch, featuring colorful cookies and sprinkles for a delightful treat that’s easy to make and perfect for any gathering.


Ingredients

  • 9 ounces circus animal cookies
  • 10 ounces mini marshmallows
  • 6 cups rice krispies cereal
  • 4 tablespoons unsalted butter
  • 3 tablespoons multi-colored nonpareils
  • 3 tablespoons colored sprinkles
  • 1/2 cup white chocolate chips
  • 12 drops red food coloring
  • 1/2 teaspoon heavy cream (optional)

Instructions

  • Grease a 9×13-inch baking dish with cooking spray.
  • Pulse cookies in a food processor until they are a mix of crumbs and small pieces, reserving 1/2 cup.
  • In a large pot, melt butter and marshmallows over low heat while stirring constantly until smooth.
  • Remove from heat and fold in cereal, cookie crumbles, and 2 tablespoons of each sprinkle type.
  • Press the mixture into the prepared pan using a greased silicone spatula.
  • Top with reserved cookie pieces.
  • Melt white chocolate chips in two separate bowls in the microwave for 30 seconds.
  • Drizzle the plain melted white chocolate over the treats using a sandwich bag with the corner cut off.
  • Combine red food coloring with the second bowl to create pink chocolate, then drizzle in the opposite direction.
  • Top with remaining sprinkles and let cool until set.

Notes

Make sure to grease your spatula to easily press the mixture into the pan.
The red food coloring can be adjusted to your desired shade of pink.
For a creamier texture, you can add the optional heavy cream while melting the chocolate.
