- 5 tbsp butter, melted

- 1 cup milk
- 3/4 cup chocolate chips
- 1 cup zucchini, shredded
Instructions
- Preheat the oven to 375 degrees Fahrenheit and line a 12-cup muffin pan with muffin liners.
- In a large bowl, combine flour, cocoa powder, white sugar, brown sugar, baking powder, and baking soda, whisking well.
- Add the egg, melted butter, and vanilla to the dry ingredients, mixing until combined. Stir in the milk.
- Gently fold in the chocolate chips and the shredded zucchini until evenly distributed in the batter.
- Spoon the batter into the prepared muffin liners, filling each one evenly. For extra sweetness, sprinkle chocolate chips on top if desired.
- Bake for 20 minutes or until a toothpick inserted in the center comes out clean.
Notes
Let the muffins cool in the pan for a few minutes before transferring to a wire rack.
These muffins can be frozen for up to 2 months; simply thaw before serving.
For added texture, consider adding nuts or replacing half of the flour with whole wheat flour.
