- 1 large egg

Instructions
- Preheat the oven to 350 degrees F. Lightly grease a 12-cup muffin tin or line it with paper liners.
- In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
- In another bowl, mix the oil, mashed banana, buttermilk, egg, and vanilla extract until well combined.
- Grate and measure the zucchini, then squeeze out the excess moisture. Add it to the wet ingredients and stir.
- Fold in the dry ingredients and chocolate chips until just combined.
- Fill the muffin cups about 2/3 full with the batter. Bake for 17-18 minutes until the tops spring back lightly when touched.
- Cool the muffins on a rack before serving.
Notes
Always squeeze excess moisture from the zucchini for better muffin texture.
