Ingredients
Scale
- 2 cups water, lukewarm
- 1/4 cup sugar
- 2 tablespoons active dry yeast
- 1/4 cup butter, melted
- 2 large eggs
- 1 tablespoon salt
- 5½–6 cups all-purpose flour
- 3 large apples, gala, honeycrisp, granny smith, or another tart and sweet variety
- 1/3 cup butter, melted, or very soft
- 2/3 cup brown sugar
- 1 tablespoon cinnamon
- 1/2 teaspoon nutmeg
- 1/2 teaspoon ginger
- 1/4 teaspoon cloves
- 1/4 teaspoon salt
- 1/4 cup butter
- 1 cup dark brown sugar
- 1/2 cup karo syrup
- 1/2 15-ounce can sweetened condensed milk
Instructions
- In a stand mixer bowl, combine warm water, sugar, and yeast. Mix and let it sit for 5-10 minutes until bubbly.
- Add melted butter, eggs, salt, and 2 cups of flour. Mix on low with the bread hook for 2 minutes until well incorporated.
- Stir in an additional 3½ cups of flour on low to combine, adding up to 1/2 cup more until the dough pulls away from the bowl. Continue kneading for 3 additional minutes.
- Turn off the mixer, cover the bowl with a kitchen towel, and let the dough rest in a warm spot for about 30 minutes until it doubles in size.
- Once the dough has risen, turn it out onto a floured surface, forming it into a small rectangle. Roll the dough into a 24" x 12" rectangle, about 1/2" thick.
Notes
Add a pinch of salt to enhance the sweetness of the caramel topping.
Using a variety of apples can add a nice complexity of flavor to the rolls.
Make sure the water is warm but not hot to activate the yeast appropriately.
