Description

This Cake Mix Pumpkin Bread is a delightful treat featuring pumpkin purée and aromatic spices, topped with a luscious brown sugar cream cheese frosting. It’s perfect for a quick snack or a comforting dessert, making it a favorite choice for any home cook.


Ingredients

  • 1 can pumpkin purée, 15 oz.
  • 1 boxed spice cake mix (13.2515.25 oz.)
  • 3 large eggs, room temperature
  • ¼ c oil, vegetable or canola
  • 2 tbsp whole milk
  • 1 ½ tsp pumpkin spice
  • 1 tsp cinnamon
  • 1 tsp vanilla extract
  • ½ tsp orange zest, optional
  • 4 oz block cream cheese, softened
  • 3 tbsp butter
  • 1 tsp vanilla
  • ¼ cup light brown sugar
  • pinch of sea salt
  • to 2 cups powdered sugar, more if needed

Instructions

  1. Preheat the oven to 350°F.
  2. In a medium bowl, whisk together the eggs until frothy.
  3. Add oil, canned pumpkin, vanilla, and milk to the eggs and whisk until combined.
  4. Stir in the cake mix, spices, and optional orange zest, mixing just until dry ingredients are incorporated.
  5. Grease and flour a loaf pan and pour the pumpkin mixture into it, spreading evenly.
  6. Bake for 50-60 minutes or until a toothpick comes out clean. Check at 40 minutes and tent with foil if browning too much.
  7. Let cool for 10-15 minutes, then remove from the pan to cool completely on a wire rack.
  8. Prepare the Cream Cheese Frosting by beating softened cream cheese and butter until smooth.
  9. Add vanilla and brown sugar to the cream cheese mixture and beat until smooth.
  10. Gradually mix in powdered sugar until desired frosting consistency is reached. Chill until ready to use.
  11. Once the bread is completely cool and frosting is set, frost generously and chill for 2 hours before slicing.

Notes

Using room temperature eggs helps create a smoother batter.
Adjust the sweetness of the frosting by controlling the amount of powdered sugar added.
Allow the bread to cool fully before frosting for better adherence.
