- 1 ¼ cup all purpose flour
- 1 cup rolled oats
- ½ cup brown sugar
- ½ tsp baking powder
- ½ tsp salt
- 10 tbsp butter, melted
- 1 tsp vanilla
- 3 cups blueberries
- 2 tbsp lemon juice
- ⅓ cup sugar
- 3 tbsp cornstarch
- ½ tsp vanilla
Instructions
- Preheat the oven to 350°F (175°C) and line an 8×8 baking dish with parchment paper, leaving a 1” overhang for easy removal.
- In a large bowl, combine the flour, oats, brown sugar, baking powder, and salt. Add in the melted butter and vanilla, mixing until combined.
- Press ⅔ of the crust mixture into the bottom of the prepared baking dish and set aside.
- In another bowl, mix the blueberries, lemon juice, sugar, cornstarch, and vanilla. Pour this mixture over the crust in the baking dish, then sprinkle the remaining ⅓ crust mixture on top of the blueberries.
- Bake in the preheated oven for 55 minutes, or until the blueberries are bubbling and the crust is golden. Let the bars cool completely in the pan, then use the parchment to lift them out before slicing into 9 bars.
Notes
For a different flavor, you can use other fruits instead of blueberries, like raspberries or cherries.
Make sure to cool the bars completely before cutting to get clean slices.
Store leftovers in an airtight container at room temperature for up to 3 days.
