- 2 cups all purpose flour
- 1 cup unsalted butter room temperature
- 1/2 teaspoon salt
- 1/2 cup powdered sugar
- 4 eggs
- 2 cups granulated sugar
- 1/4 cup all purpose flour
- 1/4 cup lemon juice
- 2 teaspoons lemon zest optional
- 1 cup fresh blueberries
Instructions
- In a medium bowl, mix the all-purpose flour, salt, and powdered sugar. Cut in the room temperature butter until the mixture is crumbly.
- Grease a 9×13 inch baking pan with cooking spray or butter, then press the crust mixture firmly into the base of the pan.
- Bake at 350°F for 18-20 minutes or until light golden brown. Remove from the oven and allow to cool.
- In another bowl, whisk the eggs until well beaten. Mix in the granulated sugar and 1/4 cup flour, then stir in the lemon juice and optional lemon zest.
- Pour the egg mixture over the cooled crust and evenly distribute the blueberries on top.
- Bake for an additional 20-25 minutes or until the top is just beginning to turn golden brown. Remove from the oven and let cool slightly on a wire rack.
- After cooling slightly, refrigerate for at least 2 hours before cutting into bars and dusting with powdered sugar.
Notes
For a richer flavor, add additional lemon zest to the filling.
Ensure the bars are completely chilled before cutting for clean edges.
These bars can be stored in the refrigerator for up to a week.
