- ¾ cup fresh blueberries, or frozen
- 1 tablespoon maple syrup
- 1 teaspoon lemon juice
- ¾ cup 4% cottage cheese
- 3 tablespoons maple syrup
- ½ teaspoon cornstarch
- ½ teaspoon vanilla bean paste , or extract
- 1 graham cracker, crushed
Instructions
- In a small saucepan, combine the blueberries, maple syrup, and lemon juice. Bring to a boil, then reduce to low heat and simmer for 10 minutes, or until the blueberries have reduced by half.
- Remove the saucepan from heat and let the mixture cool for 10 minutes.
- While the blueberry mixture is cooling, blend the cottage cheese, 3 tablespoons of maple syrup, cornstarch, and vanilla bean paste until smooth.
- Layer the cottage cheese mixture and blueberry sauce alternately in popsicle molds.
- Top with crushed graham cracker for added crunch.
- Freeze overnight or for at least 5 hours until solid.
Notes
For best results, use high-quality cottage cheese and fresh blueberries for a creamier texture.
Feel free to adjust the sweetness by adding more or less maple syrup according to your taste.
These popsicles can be stored in the freezer for up to two weeks.
