Instructions
- Combine cottage cheese, honey, and vanilla extract in a food processor and blend on high for 3-5 minutes until thick and creamy.
- Add 1 cup of blackberries and pulse until combined, creating a slight purple hue.
- Transfer the mixture to a bowl or loaf pan and mix in two crumbled graham crackers.
- Top with remaining blackberries and crumble over the last graham cracker. Optionally, sprinkle with flakey salt.
- Cover and freeze for 4-6 hours or overnight.
