- 1 teaspoon vanilla extract
- ½ cup avocado oil

- 3 large ripe bananas, peeled and halved
- ¼ cup maple syrup
- 2 teaspoons vanilla extract
- 2 large eggs
- ⅓ cup 5% greek yogurt
- ½ cup almond milk
- 2 cups all-purpose flour
- 1 teaspoon baking powder
- ½ teaspoon baking soda
- ½ teaspoon sea salt
- 1 teaspoon ground cinnamon
- 4 oz. cream cheese, softened
- ½ cup powdered sugar
- 2–3 tablespoons milk
Instructions
- Heat 1 tablespoon of avocado oil in a large nonstick skillet over medium heat. Cook the bananas for 3 minutes on one side, flip, and cook for another 3 minutes until golden brown. Set aside.
- Preheat the oven to 350℉ and line an 8×8-inch baking dish with parchment paper.
- Prepare the streusel topping by mixing rolled oats, flour, brown sugar, butter, and vanilla extract in a bowl until a crumble forms. Set aside.
- In a separate bowl, combine flour, baking powder, baking soda, salt, and cinnamon. Mix well and set aside.
- In another bowl, mix maple syrup, avocado oil, vanilla extract, eggs, roasted bananas, yogurt, and almond milk using an electric mixer.
- Gradually add the dry ingredients to the wet mixture and mix until combined.
- Pour the batter into the prepared baking dish and top with the streusel mixture. Bake for 20 minutes, cover with foil, and bake for an additional 20 minutes. Check to ensure the center is mostly baked before removing.
- Make the glaze by mixing cream cheese, powdered sugar, and milk until smooth using a mixer.
- Allow the coffee cake to cool for 15 minutes before drizzling with the glaze.
Notes
Make sure your bananas are very ripe for the best flavor.
Store any leftovers in an airtight container for up to 3 days.
For a nutty flavor, consider adding chopped nuts to the streusel topping.
