- 4 peaches ripe but firm, halved and pitted
- 3 tablespoons unsalted butter, cut into small cubes
- 4 tablespoons brown sugar, light or dark
- ½ teaspoon cinnamon
- 1 teaspoon vanilla extract
- 1 tablespoon lemon juice
- Pinch of salt
- 1 tablespoon maple syrup
- Splash of bourbon
Instructions
- Preheat your oven to 375°F and lightly butter a small baking dish that can hold the peaches snugly.
- Arrange the peach halves cut-side up in the prepared baking dish.
- In a small bowl, combine brown sugar, cinnamon, and salt; sprinkle this mixture evenly over the peach halves.
- Top each peach half with butter cubes, then drizzle vanilla extract, lemon juice, and bourbon over them.
- Sprinkle the remaining brown sugar mixture on top of the peaches.
- Bake for 25 to 30 minutes, or until the peaches are fork-tender and the tops appear lightly caramelized.
- Enjoy warm, ideally with a scoop of vanilla ice cream.
