- ½ cup all-purpose flour

- 2 whole eggs
- 1 cup panko breadcrumbs
- 1 teaspoon dried parsley
- 2–3 tablespoons olive oil, to drizzle on top of cods
- Chopped parsley, to garnish
- Lemon wedges, to garnish
Instructions
- Preheat the oven to 400 degrees F.
- Pat the cod filet dry using a kitchen towel and set it aside.
- Prepare the breading station: In a bowl, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
- In another bowl, whisk the eggs with a splash of water for about a minute and set aside.
- In a third bowl, mix panko breadcrumbs and parsley and set aside.
- Coat the cod filet in the flour mixture, dip it in the egg mixture, and then coat it with breadcrumbs until evenly covered.
- Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
- Bake the cod for 12-15 minutes until cooked through.
- Garnish with chopped parsley and lemon wedges before serving, and enjoy with some greens.
