Description

Baked Cod With Panko Bread Crumbs is a delightful dish that brings out the best in cod with a crunchy topping. It’s easy to prepare and perfect for a quick, healthy meal.


Ingredients

  • 2 lb cod filets
  • ½ cup all-purpose flour
  • 1 teaspoon salt, or more to taste
  • 1 teaspoon garlic powder
  • 1 teaspoon ground pepper
  • 1 teaspoon paprika
  • 1 teaspoon dried Italian seasonings
  • 2 whole eggs
  • 1 cup panko breadcrumbs
  • 1 teaspoon dried parsley
  • 23 tablespoons olive oil, to drizzle on top of cods
  • Chopped parsley, to garnish
  • Lemon wedges, to garnish

Instructions

  1. Preheat the oven to 400 degrees F.
  2. Pat the cod filet dry using a kitchen towel and set it aside.
  3. Prepare the breading station: In a bowl, combine flour, salt, garlic powder, ground pepper, paprika, and Italian seasoning.
  4. In another bowl, whisk the eggs with a splash of water for about a minute and set aside.
  5. In a third bowl, mix panko breadcrumbs and parsley and set aside.
  6. Coat the cod filet in the flour mixture, dip it in the egg mixture, and then coat it with breadcrumbs until evenly covered.
  7. Place the coated filets on a baking tray lined with parchment paper and spray the tops with cooking spray.
  8. Bake the cod for 12-15 minutes until cooked through.
  9. Garnish with chopped parsley and lemon wedges before serving, and enjoy with some greens.
