Description

Baked Chicken Tostadas are a delicious and easy meal featuring shredded chicken, savory salsa, and melted cheddar cheese. Perfect for a quick dinner or a fun family meal!


Ingredients

  • 3 cups shredded chicken
  • 1/2 cup salsa
  • 1 tablespoon taco seasoning
  • 1½ cups refried beans
  • 2 cups cheddar cheese
  • 4 tostada shells
  • 8 ounces shredded lettuce
  • Pico de Gallo
  • Lime juice
  • Sour cream

Instructions

  1. Preheat your oven to 400˚F.
  2. In a large bowl, mix together the chicken, salsa, and taco seasoning. In a separate small bowl, whisk the sour cream with lime juice.
  3. Arrange the tostada shells on a baking sheet. Spread refried beans onto each shell, then add a layer of cheese followed by a scoop of the seasoned chicken. Top with extra cheese.
  4. Bake for 8-10 minutes until the cheese is melted and the chicken is heated through.
  5. After baking, top the tostadas with shredded lettuce, pico de gallo, and a drizzle of lime sour cream. Serve hot.

Notes

You can use any type of cooked chicken; rotisserie is convenient.
Feel free to add other toppings like jalapeños or avocado for extra flavor.
Make it spicy by using hot salsa or adding fresh chilies.
