- 1 ripe avocado
- 1/4 cup white wine vinegar
- 1 lemon – juice only
- 1 garlic clove
- 3/4 cup avocado oil
- 2 tbsp agave nectar
- 2 tbsp cilantro (or basil, or parsley)
- coarse kosher salt to taste
Instructions
- Prepare a blender or food processor with an opening for adding ingredients.
- Halve the avocado, remove the pit, peel the skin, and place the avocado flesh in the blender.
- Add white wine vinegar, lemon juice, agave nectar, garlic clove, cilantro, and salt to the blender (do not add oil yet).
- Close the lid and blend while slowly drizzling in avocado oil until fully incorporated. Blend for a few more seconds after all the oil is added.
- Adjust the consistency by adding more avocado oil if you prefer a thinner dressing.
Notes
Use fresh herbs for the best flavor; cilantro, basil, or parsley are great options.
For extra flavor, consider adding a dash of cayenne pepper or a pinch of cumin.
Store any leftovers in an airtight container in the refrigerator.
