Instructions
- Preheat your oven to 325 degrees Fahrenheit.
- Spray a 9 x 13 inch baking pan with non-stick spray and set aside.
- In a small bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
- In a large bowl, combine the oil, sugar, brown sugar, vanilla, and eggs, whisking until smooth.
- Gradually incorporate the dry mixture into the wet ingredients until fully combined.
- Peel and chop enough apples to yield 4 cups, then fold them into the batter.
- Spread the batter evenly in the prepared pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
- While baking, prepare the glaze by combining the butter, brown sugar, sugar, heavy cream, and vanilla in a saucepan over medium heat.
- Stir frequently just until the mixture begins to simmer, then remove from heat and let it cool for about 5 minutes.
- Pour the glaze over the warm cake.
