  • 1/3 cup brown sugar
  • 1/3 cup sugar
  • 1/3 cup heavy cream
  • 1/2 tsp vanilla
  • 3 cups flour
  • 1 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp nutmeg
  • 1/2 tsp salt
  • 1 1/2 cups oil
  • 1 1/2 cups sugar
  • 1/2 cup brown sugar
  • 2 tsp vanilla
  • 3 eggs
  • 4 cups apples, peeled & chopped

Instructions

  1. Preheat your oven to 325 degrees Fahrenheit.
  2. Spray a 9 x 13 inch baking pan with non-stick spray and set aside.
  3. In a small bowl, whisk together the flour, baking soda, cinnamon, nutmeg, and salt.
  4. In a large bowl, combine the oil, sugar, brown sugar, vanilla, and eggs, whisking until smooth.
  5. Gradually incorporate the dry mixture into the wet ingredients until fully combined.
  6. Peel and chop enough apples to yield 4 cups, then fold them into the batter.
  7. Spread the batter evenly in the prepared pan and bake for 50 minutes, or until a toothpick inserted comes out clean.
  8. While baking, prepare the glaze by combining the butter, brown sugar, sugar, heavy cream, and vanilla in a saucepan over medium heat.
  9. Stir frequently just until the mixture begins to simmer, then remove from heat and let it cool for about 5 minutes.
  10. Pour the glaze over the warm cake.

Notes

For added texture, consider adding chopped nuts to the batter before baking.
Store leftover cake covered at room temperature for up to 3 days.
