Description

These Apple Cinnamon Oatmeal Cookies blend the warmth of cinnamon and the sweetness of apples for a comforting treat. With simple ingredients like oats and butter, they’re perfect for an easy homemade dessert.


Ingredients

  • 2/3 cup (160g) unsweetened applesauce
  • 2 cups (170g) old-fashioned whole rolled oats
  • 1 and 1/4 cups (156g) all-purpose flour (spooned & leveled)
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground allspice
  • 1/4 teaspoon ground nutmeg
  • 1/2 cup (113g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) granulated sugar
  • 1/2 cup (100g) light or dark brown sugar (i use dark)
  • 1 egg yolk, at room temperature
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (90g) finely diced apples
  • 1/2 cup (63g) chopped walnuts (optional)
  • 2 tablespoons (28g) unsalted butter
  • 1/3 cup (80ml) pure maple syrup
  • 1 cup (112g) sifted confectioners’ sugar
  • pinch salt, to taste

Instructions

  1. Heat the unsweetened applesauce in a medium saucepan over medium heat until it reduces by half, and cool to room temperature.
  2. Preheat the oven to 350°F (177°C) and prepare baking sheets with parchment or silicone mats.
  3. In a large bowl, combine oats, flour, baking soda, salt, cinnamon, allspice, and nutmeg.
  4. Cream together the softened butter, granulated sugar, and brown sugar using a mixer until light and fluffy, then mix in the reduced applesauce, egg yolk, and vanilla.
  5. Gradually add the dry mixture and combine until blended, then fold in chopped apples and walnuts if using.
  6. Scoop out mounds of dough and place them on prepared baking sheets, spaced apart.
  7. Bake for 14-16 minutes until the edges are set and lightly browned, then let cool on the sheet for 10 minutes before transferring to a rack.
  8. Melt together butter and maple syrup in a small saucepan, then whisk in confectioners’ sugar and a pinch of salt, drizzle over the cookies, and let set.

Notes

The cookies can be stored in an airtight container for up to 2 days at room temperature or refrigerated for a week.
For additional flavor, consider adding raisins or chocolate chips to the dough.
