Description

These Apple Cinnamon Blondies offer a delightful blend of warm spices and sweet apples. With simple preparation and comforting flavors, they are perfect for any occasion.


Ingredients

  • 1 cup peeled cored, and chopped apples (½” pieces)
  • ⅛ teaspoon ground cinnamon
  • 1 tablespoon dark brown sugar
  • 1¼ cups all-purpose flour
  • ¾ teaspoons baking powder
  • ¼ teaspoon kosher salt
  • ½ teaspoon ground cinnamon
  • ⅛ teaspoon ground nutmeg
  • ½ cup unsalted butter melted
  • ¾ cups dark brown sugar packed
  • 1 large egg room temperature
  • 1 teaspoon vanilla extract
  • 1 cup powdered sugar
  • ¼ teaspoon vanilla extract
  • ½ teaspoon cinnamon
  • 2 tablespoons milk

Instructions

  1. Heat a frying pan over medium heat, add apples, brown sugar, and cinnamon. Cook for about 5 minutes until apples soften, then set aside to cool.
  2. Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch pan with parchment paper, allowing for overhang.
  3. In a large bowl, whisk together flour, baking powder, kosher salt, cinnamon, and nutmeg.
  4. In another bowl, whisk together melted butter, packed brown sugar, egg, and vanilla extract until smooth.
  5. Combine wet and dry ingredients, folding gently with a rubber spatula until mostly combined. Carefully fold in cooled apples and any juices.
  6. Spread batter evenly in the prepared pan and bake for 18-22 minutes until top is lightly browned. Avoid overbaking!
  7. Allow to cool completely on a wire rack before icing.

Notes

For added flavor, consider using a mix of tart and sweet apples.
These blondies can be stored in an airtight container for up to 5 days.
The icing can be adjusted with more milk or sugar for desired consistency.
