- 1 cup peeled cored, and chopped apples (½” pieces)
- ⅛ teaspoon ground cinnamon
- 1 tablespoon dark brown sugar
- 1¼ cups all-purpose flour
- ¾ teaspoons baking powder
- ¼ teaspoon kosher salt
- ½ teaspoon ground cinnamon
- ⅛ teaspoon ground nutmeg
- ½ cup unsalted butter melted
- ¾ cups dark brown sugar packed
- 1 large egg room temperature
- 1 teaspoon vanilla extract
- 1 cup powdered sugar
- ¼ teaspoon vanilla extract
- ½ teaspoon cinnamon
- 2 tablespoons milk
Instructions
- Heat a frying pan over medium heat, add apples, brown sugar, and cinnamon. Cook for about 5 minutes until apples soften, then set aside to cool.
- Preheat the oven to 350°F (175°C). Grease and line an 8×8-inch pan with parchment paper, allowing for overhang.
- In a large bowl, whisk together flour, baking powder, kosher salt, cinnamon, and nutmeg.
- In another bowl, whisk together melted butter, packed brown sugar, egg, and vanilla extract until smooth.
- Combine wet and dry ingredients, folding gently with a rubber spatula until mostly combined. Carefully fold in cooled apples and any juices.
- Spread batter evenly in the prepared pan and bake for 18-22 minutes until top is lightly browned. Avoid overbaking!
- Allow to cool completely on a wire rack before icing.
Notes
For added flavor, consider using a mix of tart and sweet apples.
These blondies can be stored in an airtight container for up to 5 days.
The icing can be adjusted with more milk or sugar for desired consistency.
