  • 3 pounds baby yukon gold potatoes
  • ¼ cup greek salad dressing
  • 1 1/2 teaspoons greek seasoning blend
  • ½ lemon juice of

Instructions

  1. Chop the potatoes in half, quartering any extra-large ones, and place them in a large bowl. Cover with cold water and let soak for 30 minutes.
  2. Drain the water from the potatoes and rinse with fresh water.
  3. Dry the potatoes thoroughly and transfer them to a mixing bowl. Add the salad dressing and seasoning, and toss to coat.
  4. Spray the air fryer basket with non-stick spray and add the potatoes. Air fry at 400 degrees for 20 minutes, shaking the basket every 5 minutes.
  5. Taste the potatoes and add more Greek seasoning if desired. Before serving, sprinkle with fresh parsley and add a squeeze of lemon juice.
