Description

These Vegan Ground Beef Tacos are bursting with flavor and features easy-to-prepare plant-based ingredients. Ideal for a quick dinner or a healthy meal, they offer a delightful take on traditional tacos, making them a favorite for taco night.


Ingredients

  • 1 (14 oz.) package plant-based beef-less ground crumbles
  • 1 tablespoon extra virgin olive oil
  • 2 tbsps taco seasoning (homemade or store-bought)
  • ¼ cup organic vegetable stock + 2 tbsps
  • 8 corn shells or tortillas, warm slightly
  • shredded lettuce
  • shredded mexican vegan cheese shreds
  • pico de gallo
  • salsa verde
  • guacamole
  • vegan sour cream

Instructions

  1. In a medium-sized skillet over medium-high heat, add the olive oil until heated.
  2. Add the plant-based meat crumbles and stir while breaking them up using a wooden spoon until they resemble ground meat.
  3. Stir in the taco seasoning and veggie stock until everything is combined and the meat crumbles are covered.
  4. Bring the mixture to a boil, then reduce the heat to low and allow the meat to simmer and cook, about 15-20 minutes, until soft. Add more stock if necessary to keep it moist but not too saucy.
  5. Once cooked through, remove from heat.

Notes

Feel free to customize your toppings with your favorite greens and vegan cheese.
If desired, adjust taco seasoning to your taste preference.
These tacos can be easily made gluten-free by using gluten-free tortillas.
