Description

This Steak Bites with Creamy Mushroom Orzo is a delightful blend of flavors, featuring tender steak and a rich, creamy orzo loaded with mushrooms and parmesan. Perfect for a quick dinner that’s sure to impress family and friends!

  • 2 tablespoons unsalted butter, divided
  • 1 ½ cups (204 g) orzo pasta, uncooked
  • 3 cups (720 g / 24 ounces) chicken broth
  • 8 ounces baby bella mushrooms, sliced
  • ½ teaspoon kosher salt, divided
  • 1 large yellow onion, diced (about 1 ½ cups)
  • 1 ½ teaspoons garlic, minced
  • ¾ cup (178.5 g) heavy whipping cream
  • 1 cup (100 g) parmesan cheese, freshly grated
  • ¼ teaspoon black pepper
  • 1 pinch red pepper flakes, optional
  • 1 teaspoon fresh lemon juice
  • Fresh parsley chopped for garnish
  • 1 pound top sirloin steak, cut into 1-inch cubes
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 tablespoon vegetable oil
  • 1 tablespoon unsalted butter

Instructions

  1. Heat a large skillet over medium heat and melt 1 tablespoon of butter. Add orzo and toast, stirring frequently, until golden, about 3-4 minutes.
  2. Pour in chicken broth and bring to a boil. Reduce heat to low, cover, and simmer for 12-15 minutes until orzo is tender and liquid is mostly absorbed. Remove from heat and keep covered.
  3. In a second skillet over medium-high heat, melt the remaining butter and add mushrooms in an even layer. Cook undisturbed for 2-3 minutes.
  4. Season mushrooms with a pinch of kosher salt. Add diced onion and stir. Cook until mushrooms are golden and moisture has evaporated, about 5-6 minutes.
  5. Add minced garlic and cook for another 30 seconds.
  6. Lower heat to medium-low and stir in heavy whipping cream, parmesan cheese, remaining salt, black pepper, and red pepper flakes if using. Simmer gently for 2-3 minutes until slightly thickened.
  7. Stir in fresh lemon juice.
  8. Combine mushroom sauce with the cooked orzo, mixing gently until creamy and well combined. Cover loosely.
  9. Wipe out the skillet for cooking the steak. Pat steak pieces dry and season with salt and pepper.
  10. Heat vegetable oil over medium-high heat until shimmering. Add steak in a single layer, cooking without moving for about 2 minutes until a crust forms. Flip and cook another 2-3 minutes until browned to desired doneness.
  11. Lower heat to medium-low, add butter, and spoon melted butter over steak for 30 seconds.
  12. Plate creamy mushroom orzo and top with steak bites. Garnish with chopped parsley. Serve immediately.

Notes

For an extra kick, adjust red pepper flakes to suit your taste.
Make sure to dry the steak well for a better sear.
You can substitute the orzo with other pasta types if desired.
