Ingredients

  • 1 cup granulated sugar
  • 1 tablespoon lemon zest
  • 1/2 cup butter, softened
  • 1 teaspoon lemon extract
  • 1 teaspoon vanilla extract
  • 1/4 cup lemon juice
  • 2 large eggs
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1/2 cup white chocolate
  • 2 tablespoons lemon juice (for glaze)
  • 1/2 teaspoon lemon extract (for glaze)
  • a pinch of salt (for glaze)
  • additional lemon zest (for topping)

Instructions

  1. Preheat the oven to 350℉ and grease an 8×8-inch pan with parchment paper, allowing the parchment to hang over the edges.
  2. In a large mixing bowl, combine the sugar and lemon zest, rubbing the zest into the sugar to enhance the lemon flavor.
  3. Add in the softened butter, lemon extract, and vanilla extract. Beat with a hand mixer on medium speed until fluffy, about 1 minute.
  4. Incorporate the lemon juice and eggs, beating quickly on medium speed until the mixture is smooth and well combined.
  5. Mix in the dry ingredients: flour, baking powder, and salt, beating on low speed until just combined. Transfer the batter to the prepared baking dish.
  6. Bake the brownies for 25 minutes until the edges are slightly golden and a toothpick inserted comes out clean. Let them cool for about 15 minutes.
  7. For the glaze, combine white chocolate and lemon juice in a small bowl. Microwave in 20-second intervals until melted, stirring to combine until glossy. Stir in lemon extract and salt.
  8. Pour the white chocolate glaze over the brownies, tilting the pan to evenly distribute. Top with additional lemon zest and let set for at least 20 minutes before slicing.

Notes

For an extra lemony flavor, use freshly squeezed lemon juice.
