Description

Slow Cooker Chicken And Rice is a quick and comforting dish that brings together the flavors of succulent chicken, savory rice, and fresh broccoli—all made effortlessly in your slow cooker! Perfect for busy weeknights.


Ingredients

  • 1 medium yellow onion, diced
  • 3 cloves garlic, minced
  • 1 cup uncooked long-grain brown rice
  • 1½ teaspoons sea salt
  • ½ teaspoon black pepper
  • 1 ½ lbs boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 3 ½ cups low-sodium chicken broth
  • ¾ cup low-fat cottage cheese
  • 1 teaspoon tamari
  • ½ teaspoon poultry seasoning
  • ½ teaspoon onion powder
  • ¼ teaspoon garlic powder
  • 4 cups broccoli florets, chopped into medium-sized pieces
  • 1 cup shredded cheddar cheese

Instructions

  1. Combine onion, garlic, rice, salt, pepper, and chicken broth in the slow cooker and stir well.
  2. Position the chicken breasts in the rice mixture and drizzle with olive oil.
  3. Cover and cook on HIGH for about 3 to 3.5 hours until the rice is tender and the chicken reaches 165°F.
  4. After cooking, take out the chicken breasts to rest for 5 minutes, then chop into bite-sized pieces.
  5. Blend the cottage cheese and other cream of chicken ingredients until smooth.
  6. Return chopped chicken to the slow cooker along with broccoli and the cottage cheese mixture. Gently mix, then top with cheddar cheese. Cover and cook for another 15-20 minutes until broccoli is tender and cheese is melted.
  7. Turn off the slow cooker and serve.

Notes

Feel free to substitute any vegetables you have on hand for the broccoli.
For added flavor, marinate the chicken in some spices before adding to the slow cooker.
