- 10g / 0.3 oz unsalted butter
- 1/2 cup cream, full fat
- 3 tbsp caster sugar

Instructions
- Work steadily to keep whipped egg whites and cream cool.
- Separate the eggs; place the whites in one bowl and the yolks in another. Let the whites sit while preparing other ingredients.
- Whisk the yolks until smooth and uniform.
- Melt the chocolate and butter together in a microwave-safe bowl in 30-second intervals, stirring until smooth. Allow to cool slightly.
- Beat the cream until stiff peaks form, being careful not to over-whip.
- Add sugar to the egg whites and beat until firm peaks form.
