- 1/3 cup coconut oil
- 1 1/4 cup dairy free chocolate chips
- 3 eggs
- 1 cup coconut sugar
- 1 cup almond flour, sifted
- 1/4 tsp salt
Instructions
- Preheat the oven to 350°F.
- Melt the coconut oil and chocolate chips together in a saucepan, stirring often until smooth; then set aside.
- In a large bowl, whisk the eggs and sugar together continuously for at least 45 seconds to achieve a crackly top.
- Fold in the sifted almond flour and salt by hand to avoid over-mixing the gluten-free batter. Pour in the melted chocolate and stir by hand until fully combined.
- Line an 8×8 baking dish with parchment paper or spray it with nonstick spray, then pour in the batter. Bake for 35-40 minutes or until a toothpick comes out clean. Let them cool before cutting and serving.
