Description

These Lemon Bars offer a delightful blend of zesty lemon flavor and crumbly shortbread crust. They are easy to make, perfect for gatherings, and sure to satisfy any sweet tooth.


Ingredients

  • 1 cup unsalted butter
  • 1 cup granulated sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups all-purpose flour
  • 4 large eggs
  • 2 tbsp lemon zest
  • 1/2 cup fresh lemon juice
  • 1/4 cup powdered sugar

Instructions

  1. Preheat your oven to 350 degrees.
  2. Line a 9×13 pan with parchment paper.
  3. In a medium bowl, mix together butter, sugar, and vanilla for the crust.
  4. Add flour to the mixture and stir until combined.
  5. Press the mixture firmly into the prepared pan and bake for 15-20 minutes or until the edges are light brown.
  6. In a large bowl, sift together sugar and flour to remove lumps.
  7. Incorporate the eggs, lemon zest, and lemon juice, whisking until well combined.
  8. Pour the lemon filling over the warm crust and bake for 30-35 minutes until the center is set and doesn't jiggle.
  9. Remove from the oven and allow to cool completely at room temperature, then refrigerate.
  10. Before serving, dust the bars with powdered sugar.

Notes

Ensure the crust is firmly pressed for a flaky texture.
Using fresh lemon juice enhances the flavor of the bars.
Letting them cool completely helps them set properly.
