Description

This Healthy Grilled Chicken Cobb Salad with Honey Dijon Dressing is a fantastic blend of flavors and textures. It’s quick to prepare, featuring grilled chicken, fresh greens, crispy bacon, and topped with a creamy honey dijon dressing, making it an ideal choice for a nutritious lunch or dinner.


Ingredients

  • 3 Tbsp raw honey (melted if solid)
  • 1/4 cup dijon mustard
  • 2 Tbsp fresh lemon juice or white vinegar
  • 1/4 cup avocado oil
  • 1/4 tsp sea salt
  • 34 boneless skinless chicken breasts (about 1 1/2 lbs)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 Tbsp avocado oil (for the grill or pan)
  • 8 cups chopped romaine (or other greens, or a mix)
  • 3/4 cup cherry tomatoes (halved)
  • 1/2 red onion (thinly sliced)
  • 1 med cucumber (peeled and sliced)
  • 1 large avocado (thinly sliced)
  • 8 slices bacon (cooked until crisp, and chopped or crumbled)
  • 6 hard boiled eggs (sliced)

Instructions

  1. For the dressing, whisk all the dressing ingredients together in a bowl, gradually adding the oil until well combined. Alternatively, use an immersion blender in a tall jar to blend until smooth. Set aside or refrigerate.
  2. For the salad, mix the salt, pepper, garlic powder, and onion powder in a small bowl and season the chicken evenly. Preheat your grill or grill pan to medium-high heat and brush with oil.
  3. Once heated, add the chicken and grill for about 5 minutes on each side, ensuring it’s cooked through (165°F internally). Remove the chicken and let it rest on a cutting board.
  4. In a large serving bowl, layer the chopped greens, cherry tomatoes, sliced red onion, cucumber, avocado, crispy bacon, and sliced hard-boiled eggs. Thinly slice the grilled chicken and add it to the salad as desired.
  5. Drizzle the honey dijon dressing over the salad or serve it on the side. Enjoy!

Notes

To enhance flavor, marinate the chicken in the dressing for 30 minutes before grilling.
Feel free to swap ingredients for your favorites, like adding other veggies or using turkey bacon.
Leftovers can be stored in the fridge for up to 2 days, but the salad will get soggy over time.
