- 3 lbs frozen meatballs
- 20 oz can pineapple chunks drained with juice reserved
- 1 red bell pepper chopped
- 1 ½ cups bbq sauce
- ¼ cup brown sugar
- 3 tablespoons soy sauce
- 2 tablespoons white vinegar
- 4 garlic cloves minced
- ¼ teaspoon ginger powder
- 2 tablespoons green onions for topping
Instructions
- Place the frozen meatballs, pineapple chunks, and chopped red bell pepper in the slow cooker.
- In a separate bowl, whisk together BBQ sauce, brown sugar, white vinegar, soy sauce, minced garlic, and ginger powder. Pour this mixture over the meatballs.
- Cover the cooker and set to LOW for 4-5 hours or HIGH for 2-3 hours until the meatballs reach an internal temperature of 160°F.
- Stir the meatballs gently to coat them with the sauce, and finish with sliced green onions before serving.
Notes
You can substitute fresh meatballs if preferred, adjusting cooking times accordingly.
