- 1 tbsp olive oil
- 3 green onions, chopped, separated whites from greens
- 1 lb ground turkey
- 16 oz cole slaw mix
- 1 cup shredded carrots
- 3–4 garlic cloves, minced
- 1 inch ginger grated
- ¼ c plus tbsp low-sodium soy sauce
- 2 tsp sriracha
- 1–2 tbsp sweet chili sauce
- 1 tbsp toasted sesame oil
- ⅓ cup chopped cilantro
- ½ tsp pepper
- ½ tsp salt, more or less to taste
Instructions
- Heat olive oil in a large sauté pan over medium-high heat.
- Add chopped whites of green onions and sauté for about 1-2 minutes.
- Incorporate ground turkey into the pan, breaking it into smaller chunks and cooking until browned and cooked through.
- During the last minute, add minced garlic and grated ginger, stirring to combine.
- Toss in cole slaw mix, shredded carrots, and soy sauce, cooking for about 4-6 minutes until carrots and cabbage are tender.
- Reduce heat to low, then mix in sriracha, sweet chili sauce, sesame oil, green onion greens, and chopped cilantro.
- Season with salt and pepper, adding more soy sauce if you prefer additional moisture.
- Serve topped with cilantro and sesame seeds.
Notes
You can adjust the spice level by adding more or less sriracha.
Feel free to substitute ground turkey with chicken or beef if desired.
Customize your bowl by adding additional vegetables like bell peppers or snap peas.
