Description

  • 1 loaf brioche bread (14 ounces)
  • 6 large eggs
  • ¼ cup light brown sugar
  • ¼ cup granulated sugar
  • ½ teaspoon ground cinnamon
  • Pinch fine sea salt
  • 1 cups whole milk
  • 1 cup heavy cream
  • 2 teaspoons pure vanilla extract
  • ½ cup salted butter (softened)
  • ½ cup light brown sugar
  • ½ cup all-purpose flour
  • 1 teaspoon cinnamon
  • ¼ teaspoon fine sea salt

Instructions

  1. Butter or grease two standard 12-cup muffin pans, and set aside.
  2. Cut the brioche bread into ½” cubes and place in a large mixing bowl.
  3. In a medium bowl, whisk together the eggs, light brown sugar, granulated sugar, cinnamon, and pinch of sea salt until smooth.
  4. Add the cream, milk, and vanilla to the egg mixture and whisk to combine.
  5. Pour this mixture over the bread cubes in the large bowl, stirring until the bread absorbs the liquid.
  6. Let the mixture sit for 5 minutes to soak up more liquid.
  7. Using a measuring cup, portion the bread mixture into each muffin well, filling each with about ¼ cup, yielding around 20 muffins.
  8. Cover the muffin pans with plastic wrap and refrigerate for several hours or overnight.

Notes

Make sure the butter is softened for easy mixing.
For added flavor, consider mixing in chocolate chips or nuts.
If short on time, the muffins can be baked immediately after assembling.
