- ¼ teaspoon vanilla extract, optional

Instructions
- Combine chia seeds, almond milk, maple syrup, and vanilla extract in a bowl or mason jar. Shake well if using a jar.
- Allow the mixture to sit for 5 minutes, then stir again to ensure chia seeds are evenly dispersed.
- Cover and refrigerate the mixture for 1-2 hours or overnight until it thickens. If it's too loose, add more chia seeds, stir, and refrigerate for another 30 minutes.
- Store any leftovers in an airtight container in the refrigerator for up to 5-7 days.
Notes
For a sweeter pudding, adjust the amount of maple syrup to taste.
