Description

Ingredients

  • 4 tablespoons chia seeds
  • 1 cup almond milk
  • ½ tablespoon maple syrup, honey or sweetener of choice
  • ¼ teaspoon vanilla extract, optional
  • toppings of choice: fresh berries or other fruit, granola, nut butter, etc

Instructions

  • Combine chia seeds, almond milk, maple syrup, and vanilla extract in a bowl or mason jar. Shake well if using a jar.
  • Allow the mixture to sit for 5 minutes, then stir again to ensure chia seeds are evenly dispersed.
  • Cover and refrigerate the mixture for 1-2 hours or overnight until it thickens. If it's too loose, add more chia seeds, stir, and refrigerate for another 30 minutes.
  • Store any leftovers in an airtight container in the refrigerator for up to 5-7 days.

Notes

For a sweeter pudding, adjust the amount of maple syrup to taste.
Experiment with different toppings like coconut flakes or nuts for added texture.
