Description

This Easy Asparagus Quiche with Gruyère is a delightful dish combining fresh asparagus, rich Gruyère cheese, and a creamy custard filling, all baked in a flaky crust. It’s perfect for a quick dinner or a healthy meal to impress your family and friends.


Ingredients

  • 1 single 9-inch pie crust, homemade or store-bought (thawed)
  • 1/2 tablespoon extra virgin olive oil
  • 1 small shallot, diced
  • 12 ounces asparagus, trimmed and cut into 1 inch pieces
  • 2 cloves garlic, minced
  • ½ teaspoon salt
  • ½ teaspoon ground black pepper
  • 1/2 cup Gruyère cheese, shredded
  • 4 large eggs
  • 1 cup half and half (or heavy cream)
  • 2 tablespoons fresh dill, finely chopped

Instructions

  1. Prepare the pie crust by rolling it into a circle about 10 inches wide and ⅛ inch thick, then place it into a 9-inch pie dish and trim any excess dough.
  2. Preheat the oven to 375°F, line the crust with parchment paper, and fill with pie weights. Bake for 20 minutes until lightly golden. Remove the parchment and weights, then let cool slightly.
  3. In a skillet, heat olive oil over medium heat and add the diced shallot, cooking for about 2 minutes until softened.
  4. Add asparagus to the skillet and sauté for 3-4 minutes until slightly tender. Stir in garlic, salt, and pepper, cooking for another 30 seconds before removing from heat.
  5. Spread the asparagus mixture evenly in the prepared pie crust and sprinkle with shredded Gruyère cheese.
  6. In a bowl, whisk together eggs, half and half, and chopped dill until smooth, then pour the mixture into the crust, filling it just below the edge.
  7. Bake at 375°F for 35-40 minutes until the center is set and the top is lightly golden. Allow cooling for 15 minutes before slicing.

Notes

Make sure to blind bake the crust for a crispier texture.
Feel free to swap Gruyère for another cheese if desired.
Add other vegetables like spinach or mushrooms for variations.
