- 1 package, 8 ounces dates, chopped (about 1 ¼ cups)
- 1 cup water
- 1 teaspoon vanilla
- 1 teaspoon lemon juice
Instructions
- Preheat the oven to 350°F and line an 8×8 square baking dish with parchment paper.
- In a saucepan, combine the chopped dates and water, bringing to a boil before reducing heat and simmering for about 10 minutes until the mixture thickens and dates soften.
- Stir in vanilla and lemon juice into the date mixture once thickened.
- While the dates simmer, prepare the crumble mixture by combining oat flour, rolled oats, coconut sugar, and baking soda in a medium mixing bowl. Mix well.
- Add vanilla extract and softened butter to the oat mixture; stir with a fork or fingers until a crumble forms and starts to clump.
- Press 2 cups of the oat mixture firmly into the bottom of the prepared baking pan to create an even crust.
- Spread the date mixture over the crust evenly using a spatula.
- Sprinkle the remaining 1 cup of oat mixture over the date layer, pressing down gently with a spatula.
- Bake for 35-40 minutes until the filling is bubbly and the topping is golden brown.
- Let bars cool completely before cutting into 16 squares.
