Description

This Crock Pot Reuben Dip is a crowd-pleaser with a delightful mix of corned beef, sauerkraut, and Swiss cheese. With simple preparation and rich flavors, it’s ideal for gatherings or a cozy dinner.


Ingredients

Scale
  • 1 cup corned beef, chopped
  • 1 cup sauerkraut, drained
  • 1 cup Swiss cheese, shredded
  • 8 oz cream cheese, softened

Instructions

  1. Combine all ingredients minus the cream cheese in a 3-quart crock pot and mix with a spatula.
  2. Add softened cream cheese and mix until combined. Larger chunks of cream cheese are fine as they'll melt during cooking.
  3. Cook on LOW for 1-1/2 to 2 hours or until hot and creamy, stirring every 20-30 minutes.
  4. Serve with dippers, keeping the slow cooker on warm.

Notes

You can substitute with other cheeses if preferred.
Make sure to drain the sauerkraut well to avoid excess moisture.
