Description

This Classic Oven Chuck Roast features tender, juicy beef seasoned perfectly and slow-cooked in a rich beef broth. It’s a hearty meal that brings comfort to any dinner table. Easy to prepare, this roast is truly satisfying, making it an ideal choice for family gatherings or a cozy evening at home.


Ingredients

  • 1 chuck roast, 3 to 4 pounds
  • 2 teaspoons kosher salt
  • 1 teaspoon black pepper
  • 2 tablespoons extra virgin olive oil
  • 1 large yellow onion, sliced
  • 4 cloves garlic, smashed
  • 1 ½ cups (362 g) beef broth, plus more as needed
  • 1 tablespoon worcestershire sauce
  • 2 sprigs fresh thyme, optional

Instructions

  • Remove the chuck roast from the refrigerator and let it sit at room temperature for about 30 minutes.
  • Pat the roast dry with paper towels, then season with kosher salt and black pepper.
  • Preheat your oven to 300°F.
  • In a large Dutch oven or pot, heat olive oil over medium-high heat. Add the roast and sear for 3 to 4 minutes on each side until browned. Transfer the roast to a plate.
  • Reduce heat to medium and add sliced onion, cooking for 4 to 5 minutes while scraping any browned bits from the pot.
  • Add smashed garlic and cook for an additional 30 seconds.
  • Pour in the beef broth and Worcestershire sauce, stirring to combine. Add fresh thyme if desired.
  • Return the roast, including any juices, back to the pot.
  • Ensure the liquid reaches about halfway up the sides of the roast, adding more beef broth if necessary.
  • Cover with a tight lid and transfer to the oven, cooking for 3 ½ to 4 hours, flipping once halfway through, until tender and easily pulled apart.
  • Let the roast rest, uncovered, for 10 to 15 minutes. Pull apart for serving.

Notes

For more flavor, marinate the roast overnight with the seasoning.
The roast can be served with a side of steamed vegetables.
Store leftovers in an airtight container in the fridge for up to 3 days.
