Description

This Cinnamon Swirl Banana Cake offers an irresistible flavor with simple ingredients. Perfect as a dessert or a sweet treat during the day, it combines ripe bananas and cinnamon for that delightful taste everyone craves.

Ingredients

Scale
  • 3 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 3/4 teaspoon ground cinnamon
  • 3/4 teaspoon kosher salt
  • 3/4 cup unsalted butter, at room temperature
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 3 large eggs, at room temperature
  • 2 teaspoons pure vanilla extract
  • 1 1/2 cups mashed brown bananas, about 4 medium bananas
  • 1 1/3 cups buttermilk, at room temperature
  • 3/4 cup salted butter, softened
  • 3/4 cup packed light brown sugar
  • 1 tablespoon all-purpose flour
  • 1 tablespoon ground cinnamon
  • 2 tablespoons butter, at room temperature
  • 4 ounces cream cheese, at room temperature
  • 2 cups confectioner’s sugar
  • 1 teaspoon pure vanilla extract
  • 2 to 3 tablespoons whole milk or heavy cream

Instructions

  1. Preheat the oven to 350°F and grease a 9×13-inch metal baking pan or line it with parchment paper.
  2. In a large bowl, whisk together flour, baking soda, baking powder, cinnamon, and salt. Set aside.
  3. In a stand mixer, cream together the unsalted butter and sugars until smooth, about 3 minutes.
  4. Add the eggs one at a time, followed by the vanilla extract. Mix in the mashed bananas until well combined.
  5. Gradually add the dry ingredients and buttermilk in three parts, starting and ending with the dry ingredients, mixing just until combined.
  6. Spread the batter into the prepared baking pan while preparing the filling.
  7. In a separate bowl, combine softened butter, brown sugar, flour, and cinnamon until creamy.
  8. Drop dollops of the filling over the batter and swirl them gently with a butter knife.
  9. Bake the cake for 30 to 35 minutes, or until a toothpick comes out clean.
  10. Remove from the oven and let cool briefly on a wire rack. Do not cool completely before adding the glaze.
  11. Prepare the glaze by beating together butter and cream cheese until smooth. Add confectioner’s sugar, vanilla, and milk to achieve desired consistency.
  12. Spread the glaze over the warm cake, cut into squares, and serve.

Notes

Make sure your bananas are overripe for the best flavor.
To ensure the cake is baked perfectly, check it a few minutes before the recommended time, as ovens can vary in temperature.
This cake can be enjoyed warm or at room temperature.
