Description

This Chinese Chicken Salad bursts with captivating flavors and textures. With crispy coleslaw, juicy chicken, and vibrant mandarin oranges, it’s an ideal choice for a quick dinner or a healthy meal that everyone will love!


Ingredients

  • 14 ounce package coleslaw mix (or 34 cups shredded cabbage)
  • 1 package chicken flavored ramen (set aside seasoning packet for dressing)
  • 2 cups cooked chicken, coarsely chopped
  • 15 ounce can mandarin oranges, drained very well
  • ½ cup sliced almonds
  • 2 tablespoons white sesame seeds
  • 23 green onions, sliced (optional, for garnish)
  • ⅓ cup olive oil
  • 3 tablespoons rice vinegar
  • 1 packet ramen chicken seasoning packet
  • ½ teaspoon sesame oil
  • 1 teaspoon salt
  • ½ teaspoon pepper

Instructions

  1. Add the coleslaw mix to a large bowl.
  2. Break the chicken flavored ramen noodles into bite-size pieces and add them to the bowl.
  3. In the same bowl, combine the coarsely chopped cooked chicken, drained mandarin oranges, sliced almonds, and white sesame seeds. Toss well to mix.
  4. In a small bowl, combine the olive oil, rice vinegar, ramen chicken seasoning packet, sesame oil, salt, and pepper. Stir until well blended.
  5. Pour the dressing over the salad and toss to ensure everything is coated evenly.
  6. Garnish with sliced green onions and serve immediately.

Notes

For extra crunch, you can add some crispy wonton strips.
Feel free to substitute the chicken with tofu for a vegetarian option.
