Description

Chili Lime Roasted Cauliflower features a mouthwatering combination of spices, olive oil, and fresh lime. This quick, healthy dish is ideal for a satisfying dinner or a vibrant side that family and friends will love!


Ingredients

  • 1 large head cauliflower, cut into florets
  • 2 garlic cloves, minced
  • 2.5 tbsp extra virgin olive oil
  • 1.5 tsp chipotle powder
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp lime juice
  • 1 tbsp coriander/cilantro leaves, finely chopped

Instructions

  • Preheat the oven to 200°C (390°F).
  • In a large bowl, add the cauliflower florets. Drizzle with olive oil and sprinkle with minced garlic. Use your hands to mix and ensure the oil is evenly coated on the cauliflower.
  • Add chipotle powder, salt, and pepper. Toss everything together until the cauliflower is well-coated.
  • Spread the cauliflower on a baking tray. Bake for 25 minutes, tossing halfway through, until the edges are caramelized and the cauliflower is tender.
  • Once baked, remove from the oven. Gather the cauliflower together, and drizzle with lime juice.
  • Top with chopped coriander or cilantro and serve hot.

Notes

Adjust the chipotle powder based on your spice preference.
Feel free to substitute coriander with parsley or chives if desired.
