- 1 large head cauliflower, cut into florets
- 2 garlic cloves, minced
- 2.5 tbsp extra virgin olive oil
- 1.5 tsp chipotle powder
- 3/4 tsp salt
- 1/2 tsp black pepper
- 1 tbsp lime juice
- 1 tbsp coriander/cilantro leaves, finely chopped
Instructions
- Preheat the oven to 200°C (390°F).
- In a large bowl, add the cauliflower florets. Drizzle with olive oil and sprinkle with minced garlic. Use your hands to mix and ensure the oil is evenly coated on the cauliflower.
- Add chipotle powder, salt, and pepper. Toss everything together until the cauliflower is well-coated.
- Spread the cauliflower on a baking tray. Bake for 25 minutes, tossing halfway through, until the edges are caramelized and the cauliflower is tender.
- Once baked, remove from the oven. Gather the cauliflower together, and drizzle with lime juice.
- Top with chopped coriander or cilantro and serve hot.
Notes
Adjust the chipotle powder based on your spice preference.
Feel free to substitute coriander with parsley or chives if desired.
