Instructions
- Preheat your oven to 350°F and grease a 9 x 13-inch baking dish; set it aside.
- Melt butter in a large skillet over medium heat. Add mushrooms, onion, and celery, then sauté until they're tender, about 6 to 8 minutes. Transfer this mixture to a large bowl.
- In the same bowl, add chicken, rice, cream of mushroom soup, milk, sour cream, chives, parsley, and thyme. Stir everything gently until completely mixed. Taste and season with salt and pepper according to your preference.
- Transfer the mixture into the prepared baking dish.
- To prepare the topping, combine crackers and French fried onions in a medium bowl. Mix in the melted butter and toss to coat. Sprinkle this mixture over the casserole.
- Cover the casserole with foil and bake until the filling is hot and bubbly, which should take about 25 to 30 minutes. After that, remove the foil and bake for an additional 5 to 7 minutes until the topping is lightly toasted. Garnish with fresh parsley if you like.
