- 2 teaspoons baking powder
- 1 teaspoon baking soda
- ½ teaspoon salt
- 1 cup unsalted butter
- 1 cup packed brown sugar
- ½ cup sugar
- 1 large egg
- 2 large egg yolks
- 3 teaspoons vanilla extract
- 10 ounces chocolate chips, milk or semi-sweet
- flaked salt, for topping
Instructions
- Preheat your oven to 350°F.
- In a bowl, whisk the flour, baking powder, baking soda, and salt together.
- Heat a 12-inch oven-safe skillet (preferably cast iron) over low heat for 5 minutes. Melt the butter completely in the skillet and stir in the brown sugar and white sugar with a wooden spoon. Turn off the heat.
- In a separate bowl, whisk the egg and egg yolks. Add them to the skillet mixture, stirring quickly to avoid cooking the eggs with residual heat. Mix in the vanilla extract.
- Gradually stir in the dry ingredients until just combined. The dough will be thick, but mix until no flour is seen. Wipe the skillet edges with a damp paper towel if necessary.
- Fold in the chocolate chips and spread the mixture evenly in the skillet. Bake for 20 to 25 minutes, until mostly set in the center.
- Top with flaked sea salt and serve warm, ideally with vanilla ice cream.
Notes
Ensure the skillet is completely turned off before adding eggs to prevent them from cooking too fast.
For a richer flavor, consider using semi-sweet chocolate chips.
This cookie is best enjoyed warm with a scoop of ice cream.
